Here's my homestyle bluefish recipe.
Turn oven on baking @ 375 degrees
Take baking tray and cover it with a very thin coating of olive oil
Take fresh filet from a tailor blue and place it skin side down
Lightly drizzle some olive oil on the meat to help it cook
Sprinkle black pepper, oregano, and parsley on the meat
Place 3 strips of bacon over the meat
Sprinkle onions over the meat and bacon
Once oven is ready, place in oven and cook for 8 to 10 minutes depending on oven strength
Remember to scrape all the dark meat from the skin side off after taking out of the oven. |

Now that snappers have gotten bigger, here's a quick and easy recipe for snapper blues.
Turn oven on bake @ 360
Thin coating of olive oil on baking tray
Place 3 to 6 snapper bodies on the baking tray
Drizzle olive oil over the snappers to help cook
Your choice of herbs and spices over the fish
Place in oven for 3 to 5 minutes depending on oven strength and size of snapper
Doesn't hurt to add lemon juice and your choice of veggies.
If you're looking for a good meal, then my advice is keeping snappers 7" and over.
This is also a good recipe to use for nice sized crappie, yellows, white perch, porgy, bluegill, and pumpkinseed. |
